Event Description
As more commercial kitchens transition to all electric operations, whether driven by code requirements or operator preference, environmental health professionals are increasingly asked to evaluate emerging hot water technologies. This session explains the fundamentals of heat pump and electric resistance water heating, and compares the benefits, limitations, and performance considerations of each technology. Participants will learn practical guidance for determining when heat pump water heaters (HPWHs) are appropriate for limited service commercial kitchens and how to evaluate them in the absence of detailed environmental health guidelines.

Daniel LaCommare is an energy efficiency engineer advancing the evolution of commercial kitchens through innovative water heating technologies and next generation equipment. He has led research initiatives under CalNEXT and the California Energy Commission, including measurement and verification studies on heat pump water heaters and an exploratory project on electric coffee roasting. Daniel has authored more than 70 appliance testing reports in partnership with manufacturer representatives, focusing on both cutting-edge prototypes and market-established units to shrink kitchen footprints and optimize energy performance.
